Nothing can beat a piece ( or two.. ) of home-made cake…

Shown in the picture are two of our favourites a fruit cake, which we serve with cheese and a lemon cake with lemon sugar topping.

The fruit cake is made the way Tricia’s Grandmother made them.   The dried fruit is added to a pan with the butter, sugar and a little water and simmered gently for about ten minutes then left to cool before adding the flour and eggs.  Tricia’s take on this old recipe is to add spice to the butter and sugar mix.  Simmering the fruit this way before baking the cake makes for a lovely moist fruit cake.

Many years ago ( about twenty, if Tricia’s been honest..! )when Thomas and Luke attended the local playgroup a cake bake was arranged as a way to raise funds.  Several lemon cakes with the lemon sugar topping were Tricia’s contribution to the event.   They have been popular every since…
